Pear pancakes with blueberry sauce

during blogmas, I pointed out that we have pear pancakes with blueberry sauce for Christmas breakfast.  I got a great deal of concerns about them, so I believed I’d discover out for you what the recipe is!  It turns out it wasn’t a basic recipe discovered on the internet – it was one that my MIL cobbled together.  And it’s truly simple:

Pear Pancake

Ingredients
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 big egg
3 tablespoons butter, melted
1 pear, peeled as well as coursely grated (Bosc is a great variety)

Directions
• Sift together the flour, baking powder, salt as well as sugar
• mix in the milk, egg as well as melted butter, as well as grated pear
• Make pancakes on griddle

Blueberry Sauce

1/2 cup water
1/2 cup white sugar
1/2 cup blueberries (fresh wild blueberries are best!)

Directions
• stir water, sugar, as well as blueberries in a saucepan as well as give a boil
• minimize warm to low as well as simmer up until sauce thickens, for about 15 minutes
• serve over pancakes as well as enjoy!

The funny thing is that this year for Christmas we changed it up as well as had apple pancakes instead.  The base recipe is the same, just switch out the grated pear for finely diced Granny Smith apple as well as add some cinnamon to the batter.  We selected pure Canadian maple syrup instead of the blueberry sauce.  We likewise had sausage rounds as well as bacon on the side.
